The purpose of this research was to detect skin defect of red and white dragon fruit (Hylocereus polyrhizus and Hylocereus undatus) using image processing technique. Data obtained from this research were the percentages of skin defect of dragon fruit; skin defect was defined as colors which were a part from the color of fruit which was red, the color of the spine which was green or the color of the background which was white. Result showed that image processing technique can be used to detect skin defect of dragon fruit. This was proved by the low of the values of deviation standard which representated the concistency of the program. The value of deviation standard for various illumination position ranged from 0,11 to 0,23; for various illumination type 0,01 to 0,23; and for various fruit position on the conveyor ranged from 0,14 to 0,25. The best experimental research was achieved by applying illumination positioned perpendicular of the conveyor, by using white color lamp as illumination, and by placing the dragon fruit longwise on the conveyor.
